Mamak Night
You guessed it. Mamak night was a day full of cooking and eating at my place. Had a bunch of friends over and I want to make a special note the common behaviour I see in Malaysians. Punctuality.
Peter Teoh, the famous Malaysian himself, said he was going to come over to my place around 1pm since he was a co-organiser. But he only arrived at around 3.30pm.
Yes, I too am not a very punctual person. I sent the Facebook invite out to start at 11am but decided to tell people to come around 2pm instead since I wanted to sleep in a little and had to go do some shopping and errands during the day time.
The two things I was going to cook was curry chicken and roti canai. Curry chicken I thought wasn’t going to be too hard but I had to challenge myself by making roti canai from scratch! Yes, that’s right. From scratch.
I have to admit I had a little bit of help from my cousin who’s studying cooking. Since I’m not very familiar with baking, I needed some help with the ingredients. She has never before cooked roti before either so she decided to experiment with making the dough the same as you make puff pastery.
I had to punch butter and wrap the dough over it, then rolling it out and folding it, resting it, then keep repeating the process a few more times. It was VERY time consuming, gosh.
However, when I tried to flip the dough like how they do it at mamak (after drenching myself with oil), I discovered that the dough was a bit tough since it’s bloody cold here and I think the dough hardened. However, I did try and it came out tasting quite nice. Not too bad for a first attempt I reckon.
I even made a roti in the shape of Australia, including Tasmania!
Next I tried the curry chicken. My first mistake was placing a whole bunch of garlic and onion into the pot, then going away to grab the camera and take some photos of what other people were doing. Bad move.
Came back, the onions and garlic were slightly overcooked. I should’ve lowered the heat considerably. Oh well. The curry was pretty simple. Just chuck some chicken, a cinnamon stick, few star of annis, curry leaves (we have a plant here), coconut milk and of course, curry powder.
I didn’t know how to make it very “soupy” though, or if you want to call it, “kuah”. Perhaps I should’ve whacked in the whole coconut milk tin. Oh well, was my first attempt anyways.
Nathan brought some takeaway satay sticks and beer, How Eee brought some “siu yuk” and Jacqui brought party pies. She claims that she’s entitled to bring that since we’re in Australia. Oh, Larry brought champagne and corn. Random.
And to finish off with the spirit of Mamak, I even made Teh O Ice Limau (with the help of Jin).
We finished the night with some swimming from the Olympics on tv. Eric and Steph even brought bubur hitam for dessert. End of the day, we were all well fed and managed to have some “authentic” mamak food.
